Chile en Nogada is on the menu until the weekend -we have a limited number- so get over to Milagro before they sell out!

A bit of background for food history buffs: Chiles en Nogada were 1st prepared in Puebla in 1921 by augustine nuns honoring the signing the independence treaty by Agustín de Iturbide. The special commemorative dish reflected the colors of the Mexican flag. Ever since, eaters wait anxiously for the days surrounding the Día de la Independencia; the only time of the year that this dish is served at most restaurants, cantinas, eateries and homes!

At Milagro we prepare them the traditional way: fire-blistered poblanos are brined & stuffed with with a sweet & savoury pork & beef picadillo, prepared with seasonal fall fruits, raisins almonds, pine nuts, & aromatic spices, like clove & cinnamon. The stuffed poblano is topped with nogada, a walnut & queso panela cream sauce (nogada comes from nogal, the walnut tree), finished with Spanish sherry, served at room temperature & garnished with pomegranate seeds & parsley leaves. They are a true delicacy & one of Mexico’s most unique dishes!

After a quick broil, these babies are plopped into a luxurious chile pasilla sauce, prepared with blistered tomatoes, lots of onion, red wine & a touch of piloncillo for a subtle hint of sweet!

The origin of Pescado Rodrigo dates back to the early 1900's, when a Mexico City restaurant, Bellinghausen, began offering this dish as an appetizer -today it is served at most traditional cantinas- preparing it a mild flavored fish fillet like red snapper, seared, dressed with a lime & 'black sauces' vinaigrette, sprinkled generously with chopped cilantro & onions.

I used to visit Bellinghousen with my family as a kid. My dad would order a Rodrigo to start the meal; they served it with tortillas, limes & a zesty fresh salsa verde to prepare simple but truly delicious fish tacos at the table.

At Milagro, we use B.C. snapper fillets from City Fish Market, seasoned with s&p, seared quickly in olive oil, then topped with sliced scallions, our house lime-soy salsa Rodrigo & lots of chopped cilantro. We serve it with salsa verde de tomatillo y chile serrano, 'de la olla' beans & fresh corn masa tortillas. After preparing & serving it for almost 20 years, it is indeed a classic in its own right!
